Bread Cloche

Bread Cloche

£140.00

Isatu’s bread cloche’s are made with a micaceous clay body developed by Apache descendant Felipe Ortega to mimic high-mica clay that is naturally dug in Mexico. Having such a high content of mica (the silver flecks) makes the clay thermally resistant and oven safe. The cloche creates a steamed atmosphere for the dough, allowing moisture to escape and open the crust at an even pace. The result is perfectly baked bread, finished with a gorgeous, well-developed crust and ideal rise.
